Occasionally we smoke a beef brisket even when we don’t have a crowd to feed. When we do that, we have lots of leftovers. That means lots of figuring out how to use those leftovers. Tonight it was Philly Cheese Steak Sandwiches. And oh my, they were delicious. Just look at this!

Hubby always calls me on his way home from work and I told him what we were having for dinner, and he was so excited. So as I was putting these together and looking forward to dinner myself, I thought, why am I not taking pictures of these to share on the blog?
What mom isn’t looking for a fast easy meal? I used beef brisket leftovers, but you could use roast or steak. No need to start from scratch or let those leftovers get forgotten about and go to waste. These Philly Cheese Steak Sandwiches were so easy and quick to put together.
Just slice up the onions, bell pepper and save time by purchasing pre-sliced mushrooms. Add some minced garlic to the mix. Saute those on the stove till just caramelized. While you are waiting, slice up the leftover brisket or roast, slice the rolls, and shred your cheese.
Loading the rolls is a cinch. Lay the meat on the roll first. Veggie mix next. Sprinkle with cheese and put under the broiler for just 1-1 1/2 minutes to melt the cheese and ta-da! Take a look again at this beautiful Philly Cheese Steak Sandwich! I hope you aren’t hungry right now, but if you are and you have some leftover meat and rolls, it won’t take you long at all!
