On a beautiful spring morning we were at our favorite park—the glorious train park.

The kids always look forward to trips to this park. Of course there are great playgounds but that isn’t the draw. It is the train ride around the park. There is just something magical about a train ride.

After the train ride and getting worn out at the playground we always visit the train museum which is amazing.

You know when you imagine the your grandpa down in the basement with his model train set? This is the dream place. Huge model train sets with mountains and the like. However, the kids favorite is the model train with Disney figures that pass a town with the car wash and the fair which bleeds into a dinosaur dig. There are stations the kids put their hand on and the fair comes alive or model house lights go on and off or a crane digs dirt. And Mr. D will not let me forget the Lego town display with its own train. I have been informed on many occasions that this is his favorite.

But on this particular spring day, our midwife had a picnic for all the families she has helped deliver babies. She is absolutely amazing. One of her clients is a baker and it was thanks to her brilliance that I was introduced to Morning Glory muffins.

A month later and I was still thinking about these Morning Glory Muffins. So I went in search of the perfect recipe and ended up simply discovering my own. It is so easy, delicious, and it’s healthy!!

Sometimes we think of muffins as a guilty pleasure. All of the butter, the sugar, and sometimes chocolate. Throw all of that thinking out because these Morning Glory Muffins are delicious and healthy so you don’t have to feel guilty about this scrumptious muffin. It’s packed with whole wheat, honey, coconut oil, oh yah, and chia seeds.

I will admit, I just recently learned about chia seeds and I am amazed! They are packed full of great stuff; healthy omega-3 fatty acids, calcium, anti-oxidents, protein, carbohydrates, and fiber. How can so much be packed into that little seed??

Anyway, without further ado, here is the recipe that I have been keeping to myself for a little while. I have a few friends who have been awaiting this. Below the recipe are pictures with instructions. Enjoy and share your pictures!!

  1. Mix the dry ingredients together in a medium bowl.
  2. In a large bowl, mix together mashed banana, shredded apple and carrot.
  3. Measure honey and coconut oil together. This makes it easier to pour out. Add the honey, coconut oil, vanilla extract, egg, and coconut to the banana, apple and carrot.
  4. Add the dry ingredients to the wet ingredients and stir together until just mixed.
  5. Spoon mixture evenly into muffin cups. Bake at 350 for 22-24 minutes.
